Kerala banana chips - upperi in Malayalam - are thin slices of raw Nendran banana fried in coconut oil until golden and crisp, salted lightly while still hot. The Nendran variety and the coconut oil are what make them Kerala chips rather than generic banana chips: Nendran holds its structure and sweetness when fried, and coconut oil gives the unmistakable aroma every Malayali associates with the first handful.
